To be honest, I love mint chocolate all year around- but it's especially festive at Christmas time! Today I'm sharing my recipe for Mint Chocolate Truffle Cookie Cups. You will absolutely want to add these to your holiday baking lineup!
I have this delicious recipe for Chocolate Chocolate Chip cookies that I discovered a few years ago on All-Recipes, and with a few quick modifications, it was the perfect base for some cookie cups.
After adapting my recipe and purchasing my bag of Hershey's Mint Truffle Kisses, I discovered that they have a similar recipe on the bag of kisses! (Headdesk). Still, my base is different enough that I decided to post these anyway!
The recipe below offers a delicious chocolate cookie dough. Once you have everything mixed up, use a cookie-dough scoop or a loaded spoon to place a large ball of dough into greased mini muffin tins. You can also use paper baking cups.
While the dough is baking, unwrap your delicious truffle kisses and have them ready, because you'll need quick access to them when the cookies are done baking.
Remove your cookies from the oven and quickly press a truffle kiss into the center of each cookie, tip down. The kisses will begin to soften and melt a bit. That's exactly what you want them to do!
Once cookies cool completely, enjoy the delicious taste of rich chocolate cookies paired with creamy mint truffles. These cookie cups will be gone in a flash!
Mint Chocolate Truffle Cookie Cups
Ingredients:
1 cup butter, softened
1 1/2 cups granulated white sugar
2 eggs
2 tsp. vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
appx 24 Mint Chocolate Truffle Hershey Kisses
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.
3. Combine flour, cocoa powder, baking soda and salt in a separate bowl, then stir into the butter mixture until well blended.
4. Use a cookie scoop to drop balls of dough into a prepared mini-muffin tin. Tin should be greased or paper baking liners/cups should be used.
5. Bake cookie cups for 10 minutes in the preheated oven, or just until set.
6. While cookie cups are baking, remove the wrapping from the kisses and place them in a bowl for ready use.
7. Remove baked cookie cups. Quickly press a kiss, tip pointing down, into the center of each cookie cup. Kiss will soften and melt.
8. Cookies are best served within 12-24 hours. Keep leftovers in a tightly sealed container to maintain freshness!
