I picked this recipe to share with you because I think a key flavor of the holidays often gets overlooked. You see a lot of eggnog, gingerbread, pumpkin, cranberry and of course, chocolate. But if you're anything like me, you can't go wrong with apple. It is just as seasonal as the rest since it combines so well with all the holiday spices. So, originally from Ladies' Home Journal, I present:
Apple Cider Ginger Cookies
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 tablespoon ground ginger
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
- 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
- 1 1/4 cups packed dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup apple butter
- Colored sugar
1. Combine dry ingredients in a bowl (i used a sifter to mix it well); set aside.
2. Using a mixer, cream the brown sugar and butter together until fluffy, about 2 minutes.
3. Add egg, vanilla and apple butter until just combined.
4. Slowly add the flour mixture and beat on low speed until just combined.
5. Cover and chill dough for 1 hour.
6. Preheat oven to 350 degrees and line your cookie sheets with parchment paper or use a Silpat.
7. Using a 1 1/2" cookie scoop, or with your hands, make 2 inch round dough balls. Roll in your colored sugar of choice and place on the cookie sheet 2 inches apart. I fit 12 on each sheet, 4 rows of 3.
8. Bake for 11-13 minutes or until sides are lightly browned. Let cool on the cookie sheet for 5 minutes and then transfer to a cooling rack.
These are just the perfect little holiday cookie to bring to a party, share with your friends, or just munch on around the house. Everyone in my family loves these, and that's saying something!
